The
Tree & the Fruit: Chondroelia is the "queen"
of the region, globally renowned for its large and fleshy fruit. The
tree is robust and demanding, perfectly attuned to the microclimate
of Vrastama. Although traditionally used as a table olive, its
milling requires specialized handling to unlock its full potential.
The
Olive Oil: This is an olive oil with a robust personality and a
complex profile. The Early Harvest version of Chondroelia
is characterized by intense freshness and "green" notes
(tomato leaf, artichoke), while the Midi Harvest transforms
into an oil with a full body and a persistent aftertaste. It
possesses a natural organoleptic intensity that makes it ideal for
enhancing raw dishes and gourmet creations.
History
& Tradition: Chondroelia Chalkidikis carries a heavy legacy;
its cultivation has been recorded since antiquity, with references
linking its fruit to the diet of the Ancient Macedonians. In modern
history, this variety placed Chalkidiki on the global olive-growing
map. For us, its milling is a challenge that honors our local
tradition, proving that this "giant" of our land can
produce one of the most high-quality and unique olive oils in the
Mediterranean.
