Kalamon Olives
The
Tree & the Fruit: The Kalamon variety is famous
for its distinctive shape (curved, "hook-like") and the
deep purple color of its fruit upon ripening. The tree has large,
vibrant leaves and is particularly demanding regarding harvest time,
as the fruit must be gathered at exactly the right stage to preserve
its acidity and aromas.
The
Olive Oil (Midi Harvest): Olive oil from the Kalamon variety
offers a completely different tasting experience. It is characterized
by an exceptionally fruity profile with notes reminiscent of ripe
fruits and a subtle peppery sensation in the throat. It is an oil of
excellent balance and rich texture, standing out for its typicity and
consistent flavor.
History
& Tradition: Kalamon is perhaps the most recognizable Greek
variety worldwide, synonymous with Greek gastronomic identity.
Although its origins lie further south, its adaptation to the olive
groves of Chalkidiki over the decades has granted it new
characteristics, influenced by our own terroir. Our choice to mill
this variety is a tribute to the broader Greek olive-growing
tradition, offering a rare perspective on a fruit that is typically
consumed only as a table olive.
